Our Family's Favorite Gluten Free meals

Today I am going to share some of our family's favorite GF meals. While I am personally not gluten intolerant or have celiac disease I do have a handful of family members and friends that can't have gluten so it's always nice to have these recipes on hand when they come to visit. What is great about these is there aren't any crazy ingredients and it doesn't take long at all to prepare these meals. They are super yummy and healthy too! So check 'em out, let me know what you think and if you try them tell us what you thought!

1. Asian Turkey Lettuce Wraps

**make sure to get gluten free hoisin sauce.

our family's favorite quick & delicious meals

I don't know about you, but when it comes to planning out and making dinners for my family it's hard to find delicious and healthy meals that often don't have a ton of prep work to finally get dinner cooking and on the table. So today I'm going to share with you some of my family's favorite meals that don't take a lot of work, are healthy and are absolutely delicious!

1. One Pan Sausage and Veggies

Sheet pan meals are my absolute favorite. There is usually very little prep work and super easy clean up. This meals is full of veggies and gets it's awesome flavor from all the spices. All you gotta do is cut up the vegetables and sausage, put them on the pan, sprinkle the spices and into the oven it goes. We usually pair it with rice and it fills us right up and we have plenty of leftovers.

2. California Roll Sushi Bowls

 

I have to admit if you would have asked me a couple years ago to go get sushi, I would have walked the other direction. Thankfully my husband got me to try it and now I love it! This meal is more for the adults in the household. It's perfect for an at home date night. It's a really refreshing and light kinda meal. Again, super easy and delicious meal!

3. 15 minute Healthy Roasted Chicken and Veggies

This is another great sheet pan recipe. Just some simple veggies and chicken cooked together for a delicious dinner.

4. Giant Turkey Meatball

Mmmmm, this giant turkey meatball is so tasty. It's really a quick meal that the entire family will enjoy.

5. Sheet Pan Asian Stir Fry

Who doesn't love stir fry? Delicious meal all cooked together on one sheet pan!

6. Crockpot Creamy Taco Chicken Chili

This is a simple dump and go recipe. I made this for our family Christmas eve dinner and it was a hit! It's easy and makes a lot!

7.  One Skillet Sausage and White Bean Gnocchi

I personally never had gnocchi before this meal and man, was I missing out. This meal is super tasty! You'll definitely want seconds.

8. Korean Beef Bowl

We love a good Asian meal in our family. This is a really quick and flavorful meal. Pair it with some rice and veggies and you're good to go!

9. Sheet Pan Nachos

What's great about this meal is you can make it your own. This is a perfect meal to get the kids involved and help in the cooking. Have them add their favorite toppings and see what delicious combinations you come up with. 

10. Breakfast! 

We love breakfast for dinner in our home. It's really easy and affordable. We usually make eggs, a breakfast meat and our favorite pancakes. (we sub.coconut oil for vegetable oil)

 

Having a quick and delicious dinner shouldn't be hard to come by. Hopefully some of these recipes will help you out on those weeknights where you just don't know what to cook. Have a great week everyone!

Easy Peasy Dinners - Spinach Quesadillas

Tonight I made the easiest dinner and took me a total of 15 minutes! It's inspired by one of my meal planning momma friends who shared a recipe pretty much similar to this but I couldn't find the recipe so I made my version up as I went. So here's what you need:

frozen or fresh spinach / black beans / cheddar cheese / garlic / flour tortillas / cooking spray 

steps:

1. Sauté spinach and garlic

2. Add black beans

3. Put black beans, garlic, and spinach mixture to the side.

4. Spray the same pan to keep tortillas from sticking.

 If you haven't used Trader Joe's coconut oil spray you should just go right down to the store and get it! It's seriously the best.

5. Fill tortilla with mixture and add cheese on top

6. Top it with the other tortilla and flip.

(whenever you figure out how to flip a quesadilla without some of the filling falling out let me know) :) 

7. Top with toppings of your choice. I did green onions and tomatoes with some sour cream on the side.
